Greco is now Clean-Fried® with Organic Fera Fruit Oil

All Greco locations have made the switch. We no longer use seed oils in our fryers.

At Greco, Greek food has always meant a cleaner approach—real ingredients, olive oil, fresh herbs, nothing processed. But we still had canola oil in the fryer.

That didn’t sit right with us, so we made the change.

Every item we fry at Greco is now cooked in Organic Fera Fruit Oil, a seed oil-free oil pressed from antioxidant-rich fruit, not seeds. Healthier fats, a cleaner taste, and a better crisp with less grease.

Yiayia would approve.

QUESTIONS ABOUT OUR OIL

Are all Greco locations seed oil free?

All Greco locations, including DC, are now clean-fried® with Organic Fera Fruit Oil — meaning we no longer use seed oils in our fryers. That said, some ingredients in products we receive from vendors may still contain seed oils. We are actively reviewing those and working toward being fully seed oil free across everything we serve, with a goal of getting there by the end of the year.

Fera is pressed from antioxidant-rich fruit grown on organic regenerative farms in Colombia. Similar to avocado and olive oil, it contains primarily healthy, monounsaturated fats, with a clean neutral flavor and a high smoke point. It is free from additives, preservatives, and chemical processing — no hexane, no TBHQ.

We have been looking at ways to improve Greco beyond what is on the plate — including the ingredients and processes guests do not always see. Frying oil is a significant part of how we operate, especially given our menu, so it was a natural place to start. Fera gave us the opportunity to make that change without compromising the food. It was developed with chefs for high-heat performance, stays fresh 2X longer in the fryer than conventional oils, and produces a better crisp with less grease.

Fera comes from a unique type of palm tree grown deforestation-free on organic regenerative farms in Colombia. According to Zero Acre, producing Fera requires approximately 95% less land than soybean oil and 60% less land than conventional palm oil. For us, this is part of a broader commitment to making better sourcing decisions as Greco grows.
